Peaches and Spiced Ribeye Steak

What do you need:

  • 6 ribeye steaks, 1-inch thick

  • 12 peaches, peeled, pitted, and halved

  • 1/4 cup balsamic vinegar

  • 2 tablespoons thyme in strips

  • 1 tablespoon butter, melted

  • 1 tablespoon of salt

  • 1 tablespoon plus 1/2 teaspoon ground black pepper

  • 1 tablespoon of paprika

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 2 teaspoons lemon pepper seasoning

  • 1 teaspoon of sugar

  • 1 teaspoon ground cumin

  • 1/2 teaspoon crushed red pepper

  • Sprigs of fresh thyme

Combine salt, 1 tablespoon ground black pepper, paprika, garlic and onion powder, lemon and pepper seasoning, cumin, and red bell pepper. Rub both sides of each fillet with the mixture. Cook steaks on a preheated grill, covered, until done. When ready, remove from heat and let rest for 8 to 10 minutes. Grill the peaches over indirect heat for 5 minutes. In a medium bowl, combine the remaining black pepper, balsamic vinegar, chopped thyme, butter, and sugar. Toss the grilled peaches into the batter then serve with a steak topped with sprigs of fresh thyme.

Flank Steak Salad with Grilled Cilantro Dressing

What do you need:

  • 1/4 of a kilo of beef fillet, the fats trimmed and marked in a diamond shape

  • 1 corn, husked and silk removed

  • 4 cherry tomatoes, halved

  • 2 yellow bell peppers, seeded and halved

  • 2 onions, sliced

  • 2 cups of mixed lettuce

Cilantro dressing

  • 1 garlic clove, peeled and quartered

  • 3 tablespoons lime juice

  • 2 tablespoons fresh coriander cut into strips

  • 2 tablespoons minced shallot

  • 1 tablespoon of water

  • 1 tablespoon of olive oil

  • 2 teaspoons of honey

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon ground cumin

  • 1/4 teaspoon of salt

Combine garlic, lime juice, coriander, shallot, water, olive oil, honey, chili powder, cumin, and salt in a blender or food processor. Pulse until mixture is well combined and smooth. Place half of the dressing in a sealable container and chill in the refrigerator until ready to use. Pour the remaining half into a sealable plastic bag and place the fillets in the bag. Refrigerate for 30 minutes. When done, remove the meat from the bag and discard the excess marinade. Brush corn, sweet peppers, and onions with olive oil. Cook the meat and corn over medium heat on the grill for 20 minutes or until cooked through. Grill the bell peppers for the last 8 minutes and the onion for the last 4. Cut the steaks finely. In a serving platter, combine the grilled meat, grilled vegetables, greens, and tomatoes. Top with the cilantro dressing.
